Table or grating cheese, characteristic of the plateau of the same name in the Alps.
It is a medium fat partially cooked cheese. It is straw-coloured and has a dense, grainy consistency, with irregular little or medium eyes. Taste mild in the medium-old type, more typical and fragrant in the old type.
